The art of waiting

Long before ripening of the grapes, we regularly reduce yield so that the vines can dedicate all their energy to the best grapes. In order to preserve the distinct character of individual sites that are later reflected in the wine, we harvest our grapes site by site. The manual method allows a more selective picking, because all grapes do not mature at the same rate. This demands a lot of effort and patience, but it the only way to bring in nothing, but fully ripened, aromatic grapes.
